Slice the chicken breasts into small bite-sized pieces. Slice the onion and bell pepper, and mince the garlic.
Heat the olive oil in a large skillet or frying pan over medium heat.
Add the chicken pieces to the pan. Sprinkle in the salt, black pepper, smoked paprika, and onion powder. Cook for about 5–7 minutes, stirring often, until the chicken starts to turn golden and is fully cooked.
Add the sliced onion and bell pepper to the skillet. Cook for 3–4 minutes until the vegetables become slightly soft.
Add the minced garlic and stir for about 30 seconds until fragrant.
Pour the barbecue sauce into the skillet. Stir everything well so the chicken and vegetables are fully coated with the sauce.
Let the mixture simmer for 2–3 minutes on low heat until the sauce becomes warm and slightly thick.
Turn off the heat and sprinkle chopped fresh parsley on top before serving.
