Slice the chicken breasts into thin pieces. Slice all the bell peppers into strips. Mince the garlic and ginger.
Put the soy sauce, oyster sauce, salt, and black pepper on the chicken. Mix well.
Heat the olive oil in a large pan over medium heat.
Add the minced garlic and ginger. Cook for about 30 seconds until fragrant.
Add the chicken to the pan. Cook for 5–7 minutes and stir often until the chicken is fully cooked.
Add the red, yellow, and green bell peppers to the pan.
Stir and cook for 3–5 minutes until the peppers become slightly soft but still colorful and crunchy.
Taste and add more salt or black pepper if needed.
Turn off the heat and serve warm.
