Cut the chicken breasts into small bite-sized pieces and place them in a bowl. Add salt, black pepper, and cornstarch. Mix well until the chicken is coated evenly.
In a small bowl, mix together the honey, minced garlic, soy sauce, water, and sesame oil. Stir well and keep the sauce aside.
Heat olive oil in a large frying pan over medium heat.
Add the chicken pieces to the pan in a single layer. Cook for about 4–5 minutes while stirring occasionally until the chicken turns golden and is fully cooked.
Pour the honey garlic sauce into the pan with the chicken. Stir everything together well.
Cook for another 2–3 minutes until the sauce becomes slightly thick and coats the chicken evenly.
Turn off the heat and let the chicken rest for 1 minute.
Serve hot with rice, noodles, or vegetables.
