  • 2 cups cooked chicken breast shredded or diced (about 300g)
  • 1 large fresh cucumber thinly sliced
  • 1 cup cherry tomatoes halved (about 150g)
  • ¼ medium red onion finely sliced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cloves garlic minced

Method
 

  1. Thinly slice the cucumber, halve the cherry tomatoes, finely slice the red onion, and chop the fresh parsley. Place everything in a large mixing bowl.
